Chef Brian Ellis began his love affair with cooking at a young age - influenced by his food-loving family, he spent his childhood working and learning in pizzeria kitchens. His appreciation for all things culinary continued as a student at Johnson & Wales University where he cultivated his passion for food and hospitality, and began to push his creative bounds. Brian joined Corner Table Restaurants in 2003, and helped open the first location of The Smith in 2007 in New York City’s East Village. Fast forward, and Corner Table now operates four locations of The Smith in Manhattan, two in Washington DC and one in Chicago with Brian leading the culinary team as the Vice President of Culinary and Executive Chef. Constantly striving to source the best and ingredients from local farmers and purveyors, Brian continues to create an innovative menu featuring seasonal takes on classic bistro dishes at The Smith.
